Chow Mein with Cashew Nuts

 

Serves 4as an accompaniment or 2 as a main meal

 

1 sachet Flava-it Chinese Marinade

100g (4oz) packet Cashew Nuts

600g (1lb 5oz) Family Stir Fry Vegetable Pack
250g (9oz) Dried Medium Egg Noodles
2 x 15mlsp (2tbsp) Vegetable Oil
2 x 15mlsp (2tbsp) Soya Sauce

 

  

Method

 

1. Place the noodles in a bowl of boiling salted water for 5 minutes, stir occasionally to separate. Drain.
2. In a wok or large frying pan heat the oil, add the cashew nuts and toss until lightly brown, remove with a slotted spoon to a plate.
3. Combine the Flava-it Chinese Marinade with the Stir Fry vegetables and add to the wok. Cook for 3 minutes over a high heat tossing the vegetables to allow them to cook through.
4. Add the drained noodles and Soya Sauce and combine, cook a further 2 - 3 minutes until all are piping hot, return the cashew nuts to the wok, stir through and serve.
